Parsnip soup

Parsnip Soup

1 white onion
4 medium size parsnips
1 veg stock cube
1 tbsp olive oil
2 garlic cloves
salt/pepper

Peel & slice the parsnip, steam or boil (steam is better) for about 7 mins..

Peel & chop onion & garlic,put oil into pan (medium heat) & add onion/garlic
Stir for a couple of mins then add your stock about a pint & a half then add parsnips.
Season to taste/ add herbs if you wish.
Leave on low heat for another 10 mins then blend & enjoy..

thanks Des,  do you think I could get away with no onions?  (I'm allergic to them   )  am looking forward to the lentil bake recipe too - I have a cheese and lentil bake recipe that I'll post too if anyone is interested

Sounds really nice, but I have yet to see a parsnip being sold in holland.  Great veggie to have

Post away Zaf, the more there is the better.  
Give each recipe a thread of its own though  
This allows people to post another recipe or offer suggestions.

Anyone got one for Square Sausage or Haggis

Yeah you can use flour & milk to give it the bulk..Thats what a lot of chefs still use rather rather than the onion..
I have a recipe for it somewhere, il look it out for you

parsnips terrify me a little because i am always mistaking them for a chips which is always a little alarming.
but i do enjoy making soup so i may try and get over the fear and combine the two.

There is nothing wrong with veggie, we are mostly veggie apart from the odd bit of fish

Right Zaf here it is, hope that it makes sense..

You can make the soup as normal,   sweat off all your veg add your stock and all the rest of it.  You  can make a mirepoix without onions

,  very finely diced leeks, carrots, parsnips  and any other aromatic vegetables and flour,  sweat them off and then add the rest of your ingredients.

Follow the recipe & instead of parsnip use the vegetables of your choice, potatoe & leek, carrot etc the worlds your oyster..
