Parsnip soup

Parsnip Soup

1 white onion
4 medium size parsnips
1 veg stock cube
1 tbsp olive oil
2 garlic cloves
salt/pepper

Peel & slice the parsnip, steam or boil (steam is better) for about 7 mins..

Peel & chop onion & garlic,put oil into pan (medium heat) & add onion/garlic
Stir for a couple of mins then add your stock about a pint & a half then add parsnips.
Season to taste/ add herbs if you wish.
Leave on low heat for another 10 mins then blend & enjoy..

thanks Des,  do you think I could get away with no onions?  (I'm allergic to them   )  am looking forward to the lentil bake recipe too - I have a cheese and lentil bake recipe that I'll post too if anyone is interested

Sounds really nice, but I have yet to see a parsnip being sold in holland.  Great veggie to have

Post away Zaf, the more there is the better.  
Give each recipe a thread of its own though  
This allows people to post another recipe or offer suggestions.

Anyone got one for Square Sausage or Haggis

Yeah you can use flour & milk to give it the bulk..Thats what a lot of chefs still use rather rather than the onion..
I have a recipe for it somewhere, il look it out for you

parsnips terrify me a little because i am always mistaking them for a chips which is always a little alarming.
but i do enjoy making soup so i may try and get over the fear and combine the two.

There is nothing wrong with veggie, we are mostly veggie apart from the odd bit of fish

Right Zaf here it is, hope that it makes sense..

You can make the soup as normal,   sweat off all your veg add your stock and all the rest of it.  You  can make a mirepoix without onions

,  very finely diced leeks, carrots, parsnips  and any other aromatic vegetables and flour,  sweat them off and then add the rest of your ingredients.

Follow the recipe & instead of parsnip use the vegetables of your choice, potatoe & leek, carrot etc the worlds your oyster..

I would gladly provide one, but my missus don't do Mince, neeps and tatties now.
Neeps must be mashed for max effect

I used to eat them raw, just took the top off with a knife (Out of my pocket) and sliced a bit off the top.
Raw neep, lovely.

Till I found out you can get worms from raw neep!!!

Can't win them all

Mince is ground beef, and the neeps turn that colour when cooking, but they are the better for a bit of frost!

This is Cuban style mince meat...I add diced fried potatoes, diced tomatoes...and you have to have a side of black beans and sweet plantains...



I like it with diced onions...

I have a way of cooking turnips (Neeps) that's a bit different.

You need to take all the skin off for this one.
Cut it into quarters, depending on size I suppose.

You are going to roast it in the oven.
I only use gas, so I'm not sure about electric settings.

Get a big bit of tin foil.
Put the quarters onto the foil.
Rub real butter, not margarine, over the quarters.
Then sprinkle some sugar over them, about two tablespoons worth.

Wrap the foil around them, put them on a baking tray.
Gas mark 6, in the centre of the oven. 20 to 30 mins.
Again depending on size.

The sugar mixes with the juices, and the butter helps the roasting effect.

Honestly, it's a really nice way to eat turnip.

INGREDIENTS
3 turnips, peeled and chopped
1 pound bacon
4 tablespoons rendered bacon fat
1/2 cup packed brown sugar

DIRECTIONS:
Bring a pot of salted water to a boil. Add turnips; cook until tender but still firm. Drain, and transfer to a large bowl to cool.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside. Reserve bacon fat.
In the large bowl, combine turnips, bacon, reserved bacon fat and brown sugar. Mix together and serve.


I got this from my Recipe file online...There seems to be alot a turnips recipes and most of them are from US....
