PINEAPPLE CAKE
PLACE INTO A SAUCEPAN
6OZ BROWN SUGAR.
12OZ MIXED FRUIT.
4OZ CHOPPED CHERRIES.
4OZ BUTTER / MARGARINE.
6OZ CHOPPED PINEAPPLE.
6FL OZ PINEAPPLE JUICE.
MIX TOGETHER & BRING TO THE BOIL.
BOIL FOR 10 MINS & LEAVE TO COOL.
ADD 2 EGGS & 8OZ SELF RAISING FLOUR.
PLACE MIXTURE IN A FULLY LINED 7” CAKE TIN.
BAKE FOR 1 ½ --1 ¾ HOURS @ 160 DEGREES C. _________________ You can chop a bit off, but you can't chop a bit on. |

Thanks Sandy...It sound like a fruit cake, I'm printing the recipe for my daughter she loves to bake...she wants to take a culinary class next year... _________________

Hi Maria, Yes, it is a type of fruit cake, but it won't keep as long as a traditional rich fruit cake (liker a Dundee cake). _________________ You can chop a bit off, but you can't chop a bit on. |

Would so much like to try a bite of that but unfortunately I'm diabetic.
Got the saliva juices flowing though.
