The only thing too complicated for a man to do is have a baby. I do a lot of cooking and baking, including such "easy" things as baklava, profiteroles, slow smoked brisket, jambalya, keshy yena, and the like. Cooking is more often than not a mans occupation. _________________ Up yer kilt and down the hatch |

One Ox tail (Jointed)
2 oz o' dripping
2 onions
quarter lb o' ham rinds
2 quarts o' water
quarter ib o' turnip
2 bitties o celery
Uno carrot (like the flavour o' a foreign language)
Bouquet o' Herbs (bouquet's kinda foreign as well)
A bittie o' Salt
Chopped up mushrooms
One and a half ozs o' cornflour to each quart o' soup.
here we go:
1. cut the ox tail into joints and gie them a good wash
2. fry ingin (onion)
3. Add ham rinds and water and simmer for aboot 3 hours
4 Add the vegies, herbs and seasoning and simmer another 2 hours.
5. Skim it well.
6. Thicken with blended cornflour.
7. Remove from heat cut the ox tail up finely and return tae thae pan an reheat. Add a bit o' sherry; it's really fine.
If liked, the soup can may be made the previous day afore supping and you dinna need tae thicken it coz this allows the fat to solidify on top; but jist skim it wi' a spoon onywye. Nice crust breid alang wi' it. Fine _________________ Ne'er dee i' day fit yi'd ne'er dee i' morn. |
