Maria,

Hope you like this one better, but do suggest that you get more whisky before you start.

Ingredients:

1 Pig's Head
2-3 boiled eggs
2 inguns (onions)
12 peppercorns
some blade mace
3 cloves
Salt and Pepper

Right here we go- sorry forgot. Have some more whisky.

1. Give the head a good clean and then pickle it for about three days. (Go have some fun.)
2. When you have returned boil the head slowly till the flesh leaves the bone easily, round about 3 hours. pour some whisky.
3. Remove the tongue from the head, skin and slice thinly. You'll be needing more whisky.
4. wet a plain round mould and decorate it with the sliced tongue and egg cut in slices.
5. Cut the meat from the head into a large dice.
6. Put the head bones on with 1 quart of the liquor and add onions, peppercorns, mace and cloves. Boil for half-an-hour until stock gels up when cold. Pour another whisky.
7. season the meat and strain the liquor over. Stir occasionally till setting.
8. Turn out when quite firm.

I like some nice plain basmati rice with it and a Chardonay.

Maria,

I take it you do not fancy the Brawn (pigs heid), so I presume Sheep's Heid is out of the question. Ok, we can do something more prosaic like Queen Cakes in the future, however we'll try not to make them too ordinary, and the shortbried you'll just love. Promise.
