Belgian Cake
Butter or margarine 4oz
raw brown sugar 3 oz
2 eggs beaten
100% wholemeal self-raising flour 5 oz
mincemeat (the kind that goes in xmas mince pies )
water 1 or 2 tbsp
Cream the butter & sugar together until pale & fluffy.
Beat in the eggs a little at a time.
Fold in the flour,then fold in the mincemeat & water.
Spoon the mixture into a greased & based lined 8" cake tin.
Level the surface
Bake at 170C /325F/Gas mark 3 for about 30mins until well risen & golden..
It tastes fantastic & even better with the rum laden mincemeat  |

Mince meat...is that like a dry powder mix or like cloves, (seed)?
I hear mince meat and that means your going to get beat to a bloody pulp....
